Spain and Italy produce over half of world total production
of OLIVE OIL. ROMULO
OLIVE OIL by CASA PONS is produced
from hand picked olives exclusively obtained from Arbequina
and Cornicabra varieties which
are native to the north of Spain. Both varieties produce
a noble, full bodied, sweet and pleasantly fruity-tasting
oil. 
A mechanical pressing process is used to obtain oil at temperatures
below 36 C / 97 F. This method is called the "first
cold press". The mats serve to filter and sift the
extracted oil which is collected at the base of the press.
The pressing process produces a brightly gold-coloured liquid
composed of oil and vegetal water, which are separated in
centrifuges. The oil is then immediately stored in underground
vats to keep it fresh for long periods of time.
